Chef Adam Stevenson brings impressive culinary pedigree to celebrated Seattle Southside hotel

Cedarbrook Lodge announced on today, Feb. 27 the appointment of Adam Stevenson as Executive Chef of the lodge.

Stevenson will lead the food and beverage team at the SeaTac-based boutique hotel, including Copperleaf Restaurant, known for its farm-to-table regional cuisine and locally grown ingredients, and private events, catering and group business.

Stevenson brings over 30 years of experience in the restaurant and hospitality industry, with a strong emphasis on Northwest cuisine and culinary innovation.

He began his career in Seattle at Tulio at the Hotel Vintage and Earth & Ocean at W Seattle. Most recently, he served as the executive chef at Motif Hotel and the Pro Sports Club in Bellevue.

“We are thrilled to have Adam leading and evolving the culinary offerings at Cedarbrook Lodge,” said Roy Breiman, Director of Food and Beverage for Columbia Hospitality. “He shares our Northwest-centric mission and focus on sustainability, and we look forward to seeing how he enriches the locavore experience that we strive to offer year-round.”

Stevenson’s vision for Copperleaf Restaurant is to maintain its artisanship while also creating fresh, refined dishes by simplifying and celebrating the ingredients. He plans to enhance the chef’s gardens nestled on the grounds of Cedarbrook, as well as feature foraged Northwest mushrooms, shoots and stalks.

Guests will continue to be delighted by an inspired dining experience at Copperleaf, whether they are enjoying lunch or dinner, or celebrating a special occasion.

“I am honored to join such a talented team, especially one known for its commitment to community involvement and local outreach programs,” said Chef Stevenson. “I look forward to growing awareness of this hidden gem south of Seattle through delicious food and exceptional dining experiences.”

Copperleaf Restaurant features stunning hand-blown glass sculptures, a prominent stone fireplace that contributes to its comfortable ambiance, and picturesque windows that frame spectacular views of Cedarbrook’s beautifully landscaped backyard.

It’s calendar of epicurean events creates unmatched culinary experiences for locals and guests, including annual happenings such as Jazz on the Lawn, the Heirloom TomatoFare and Culinary Adventures. Additionally, Copperleaf Bar & Terrace offers bites and seasonal cocktails on its recently renovated patio that overlooks the lawn.
